Lamington balls are an Australian culinary icon. This simple non-baking dessert recipe is easy to make and can be enjoyed at any time.
• 300g Chocolate Biscuits
• 1 Can Condensed Milk (sweetened)
• 2 Cup Desiccated Coconut
Place the biscuits in a food processor and process until crumbs form. Add the condensed milk and 1 1/2 cups of the coconut and mix well. Scoop balls of the mixture, coat with the remaining coconut and place on a baking tray. Place the baking tray in the fridge for 3 hours to set.
