Mint Ice Cream
This easy to make ice cream is perfect to whip up for dessert during the warm spring nights.
• 250g Mascarpone
• 300ml Double Cream
• 3 tbsp Caster Sugar
• 3 tbsp Cream Sherry
• 3 tsp Peppermint Extract / 1 Cup Mint Chips (melted)
• Green Food Colouring (optional)
Add the mascarpone, double cream, caster sugar and sherry into a bowl and whisk together until medium peaks form. Add the peppermint extract or the melted mint chips to the mixture and whisk together. Add green food colouring to add more colour. Add the cream to bowls and chill until serving time.
